Mini Cheesecake Bites with homemade strawberry sauce

Hello beautiful readers assalam alaikum. Welcome to my blog. Ive been craving cheesecakes for a long time, its not your regular cheesecake but the mini cheesecake bites I've been dying for.
They are super cute in size and just the right proportion for anyone who has a sweet tooth but wants to keep it minimal.
These mini cheesecake bites are super creamy and light with just the right amount of sweetness. This mouthwatering cheesy deliciousness is an absolute favorite and a complete crowd pleaser.
This recipe is super easy, quick and also it doesn't require any fancy equipment or over the top ingredients. Isn't that great.!!
All u have to do is follow the recipe and enjoy these amazing mini cheesecake bites.
U can top these with whatever topping u like. Some topping ideas are :
1.Caramel sauce topping
2.Fresh fruit with whipped cream topping
3.Chocolate ganache topping
4.Blueberry sauce topping or
5.My Fresh strawberry sauce topping.

MINI CHEESECAKE BITES
PREP TIME :30 MINS
BAKE TIME :15 MINS
YIELDS : 24
INGRIDIENTS :
For the filling
500 gms cream cheese
100 gms labneh/yogurt/sour cream
1/3 cup heavy cream
1 cup suger
11/2 tsp vanilla extract
2tbspn lemon juice
2 eggs
For the crust
100 gms melted butter
2 packs of digestive biscuits
METHOD:
Add the biscuits to a food processor or blender and blend till the mixture is sandy. Add in the melted butter, mix well and keep it aside.
In a bowl add in the cream cheese, labneh, and heavy cream and whisk it well. Add the suger and mix
Add the eggs one at a time and mix. Add the vanilla extract and lemon juice and mix everything until fully incorporated.
Preheat the oven to 350 degree. Line a 12 count muffin pan with cupcake liners. (u can use whatever muffin pan u have).
Press 1 tablespoon of crust mixture firmly into the liners.
Divide the batter equally into the liners, about 2 or 21/2 tablespoon each. (do not overfill)
Bake for 15 mins or until the edges are set. It will be slightly jiggly and rise in the middle, but thats ok. It will set once cooled.
Carefully remove the liners and keep it on a wire rack to cool at room temperature. Once the cheesecake is cooled, refrigerate for 4 hours or preferably overnight.
Top it with fresh strawberry sauce or any kind of topping amd serve cold.
Tadaaaaa...... And there u have it. Amazing and simple recipe to the most creamy and delicious mini cheesecakes.
They can be baked ahead of time, these mini cheesecake can be kept in the refrigerator for about 3-4 days.
Also you can freeze the unbaked cheesecake batter, all u have to do is fill the liners and freeze. Thaw it before baking.
