Hello and assalam alaikum, Ramadan Mubarak to all my Muslim readers .Am back with a yummy and delicious citrusy lemon cake recipe .
This lemon cake is light , citrusy and so cery refreshing. Perfect for picnics , lunch or parties . The cake is not overly sweet , citrusy , and also spongy . u can also use this recipe for poke cakes .
This lemon cake recipe is my ultimate yummy vanilla cake base recipe which I will be posting soon .
Not everyone is a fan of citrus but believe me u'll be wanting more after u try this . and for the lemon lovers out there u've gotta give this citrusy heaven a try .
All u need for this cake is some flour , suger , eggs , milk , oil ( yes we are using oil and not butter and its totally worth it ) vanilla extract (this is completely optional u can always skip it if u don't want ) baking powder ,baking soda and a little vineger , 3-4 lemons juice and a little of the lemon zest , and thats it ur good to go.
U can top this cake with lemon cream cheese frosting (recipe will be shared soon) or with our classic lemon glaze . finally finishing it off with some fresh strawberries and slice of lemon to make it look more fancy 😉.
So let's not waste anymore time and quickly let's get baking .
Lemon cake recipe
Prep time : 15-20 mins
Bake time : 35-40mins
Ingredients:
2 cups all purpose flour
1 cup oil
1/2 cup milk
4 eggs
3tsp baking powder
1/4tsp baking soda
11/4 cup suger
1/2 tsp vineger
2tbspn lemon zest
3-4 tbspn lemon juice
1cup Icing or powdered suger
1tbspn heavy cream
Method :
Preheat oven to 350 . line a 9inch baking pan with parchment paper
In a bowl add in eggs and suger and beat with an electric mixer till light in color . add in vanilla extract while keeping the mixer on (u can skip this if u don't wanna add the vanilla).
Add in oil and suger and mix well .
Add the dry ingredients and give it a good mix until no lumps . at this point add in milk and mix until everything is fully incorporated .
Finally add in the lemon juice and lemon zestand mix well . ( u can always increase or decrease the amount of lemon juice and zest according to ur liking )
Pour the batter into the prepared pan and bake for for 30-35 mins or until golden on top and a toothpick inserted should come out clean .
Let the cake cool down rgen remove it on a wire rack and let it come to room temperature.
For the glaze take a vowel , add 1 cup powdered suger add in 2tbspn of lemon juice and 1/2tbspn of lemon zest . add 1tbspn of heavy cream and mix well . the glaze should be thick and creamy . and not very runny .
Cut out the cake and top it with lemon glaze and garnish with fresh strawberries and a slice of lemon .
Yaaayyyy....... Yummy delicious citrusy lemon cake is ready to be attacked at .
Please not : you can always increase or decrease the quantity of lemon juice and zest according to ur liking. Since I like my cake a little more on the citrusy sidr I add in more if u want it not too much u can always lessen it up and u r good to go .
